3 EGG WHITES WHIPPED
I CUP PECANS, CHOPPED
1 TSP. VANILLA EXTRACT
IN A SUACEPAN STIR SUGAR, KARO, & WATER OVER MEDIUM HIGH HEAT UNTIL BOILING. TEST BY DROPPING A DROP IN COLD WATER, WHEN IT FORMS A BALL(THE CONSISTENCY OF HARD CANDY, IT IS READY)
BEAT THE EGG WHITES TO WHIP CREAM CONSISTENCY, POUR THE KARO IN A LITTLE AT A TIME , BEATING THOROUGHLY EACH TIME UNTIL MIXTURE BEGINS TO THICKEN.
ADD VANILLA AND BEAT UNTIL THE MIXTURE BOGGS DOWN THE BEATER.
ADD NUTS AND IMMEDIATELY DIP SPOONFULS ONTO WAX PAPER.*
