LOBSTER A LA BOONE
AN ORIGINAL

4 Medium Idaho potatoes
4 lg. Rock lobster tails or 8 to 12 oz, meat from Florida or Main Lobster
1 8oz. Pack sharp cheddar cheese (grated)
8-12 oz. Milk
1 ½ -2 tsp. Salt
¼ to ½ tsp. Black pepper
1 lemon (juice)
1 tbsp. Paprika
1-2 tbsp Worcestershire sauce
Tabasco sauce
½ stick of butter

Boil lobster tails, remove meat from shells and cut into bite size chunks.
Sprinkle with salt and pepper. Add paprika, juice of one lemon, Worcestershire and dashes of Tabasco, turning to cover all pieces of meat. Set aside in refrigerator.

In a microwave or conventional oven, bake the potatoes until done.( do not boil potatoes, make the dish too soupy).
Peel potatoes. While hot, mash potatoes in a 2qt. Casserole dish with 1 tsp. Salt ¼ tsp. Pepper, ½ stick butter, and 6oz. of grated cheese until well blended. Add milk in small portions, while stirring, until mixture is consistence of mashed potatoes.
Fold in the marinated lobster, top with remaining grated cheese, sprinkle top with paprika and bake in pre-heated oven at 350* for 20 minuets or until heated through out and bubbly .

Serve warm as entrée or side dish
