DOWN HOME AND DELICIOUS, MIXED GREENS SOUP

1/2 bag (16 oz.) frozen chopped turnip greens
1/2 bag (16 oz) frozen chopped collard greens
1/2 bag (16 oz) frozen chopped mustard greens
12 cups chicken stock
1/3 cup olive oil
1/3 cup flour
1 cup celery (chopped)
1 cup onions (chopped)
1 cup wild rice
2 ham hocks
2 tbsp fresh thyme

Sauté onions and celery in olive oil.
Add flour slowly, stirring constantly to make a roux.
Add chicken broth, ham hocks and wild rice. Simmer for 1 hour.
30 minutes prior to serving, add the greens and thyme.
