POTATO CANDY
1 Medium Irish Potato
2 to 3 lb. Confectioners Sugar
Smooth Peanut Butter
Peel and quarter potato, boil until done, drain all water and mash until smooth and free of any lumps.
Add sugar in small amounts mixing as you add , Continue adding sugar until the mixture has the consistency of dough .
Roll out on flat surface, sprinkled with confectioners sugar, to about ¼ “ thickness. Spread peanut butter on top, cut into 4 pieces. Roll up each piece (like jelly roll) .Cut crosswise in ¼ to ½ inch pieces.
Store in refrigerator
