BOOM BOOM’S SALMON PATTIES
1 Can (6 oz.) boneless, skinless salmon
1 tbsp. Mayonnaise
1 lg. Egg
1 small onion (chopped)
corn meal (bread crumbs work just as well)
Oil for Frying
Drain salmon, separate, and mix, with the mayonnaise, egg and onion. Add corn meal, a little at a time until mixture will form into patties.*
Scoop mixture with a large spoon to form patties and place in hot cooking oil.
Cook over medium heat, turning once, until golden brown on each side.
Yields 4 to 5 patties.
*Be careful not to get too much corn meal, just enough to hold the mixture together is all that is needed.
Left over cooked Salmon is great for this
