Pizza Sauce
1-28oz, Can crushed tomatoes
1 1# can Tomato Sauce
Add
1 tsp. Oregano
½ tsp. basil
½ tsp. Thyme
1/8 tsp. Each red and black pepper
1 tsp. salt
1 bay leaf
Combine in 4-qt boiler and cook on medium heat about 20 min.
Add
1- small onion (finely Chopped)
2-cloves of garlic (minced)
½ -bell pepper (finely chopped)
Cook onions for 3 min. in microwave, in butter or olive oil .Add garlic, and cook for 1 additional min.
Chop pepper and cook in microwave for 2-to3 min in butter or olive oil.
Simmer for 20 to 30 minuets more.
Use on pizza, spaghetti etc,
*Optional- add 8 oz sautéed fresh mushrooms
1. Sprinkle Cajun seasoning on chicken breast. Sear on both sides in a skillet. Remove to ovenproof pan or dish and cook at 350 for 20 to 30 min. (depending on thickness of breast).
Serve with spaghetti topped with the sauce.
2. Add the sauce to browned and drained ground beef to make a meat sauce for spaghetti.
3. Add 1 tablespoonful of Chili powder, ½ teaspoonful cumin and 1 pound of red kidney or hot Chile or black beans. (If you want more heat increase the red pepper to ¼ teaspoonful)
4.Use as a sauce for pizza.
*Fresh tomatoes ( when available) make a better sauce
Place tomatoes in the sink , bring enough water to cover to a boil, pour over the tomatoes. In about 5 min. the skins will come off easier than a Spice Girls Prom Dress.
*For less heat, cut the red and black pepper in half.
*For sweeter, without sugar, double the sweet basil or add ½ teaspoonful of tarragon.
