SWEET POTATO SOUFFL'E

6 Large Sweet Potatoes, boiled or steamed until tender (Fresh potatoes work best)
8 oz. (half of a box) brown sugar
1 stick butter
1/2 cup cream or evaporated milk
1 teaspoonful salt
1 teaspoonful vanilla extract

Mash potatoes,
Add the other ingredients
Mix well and put in an oven safe casserole dish

Top with a mixture of
1/4 cup brown sugar, 3/4 stick melted butter, 1-1/2 cups pecans mixed together and added before bakling.

Place casserole in a pre-heated 350* oven and bake until golden brown.
