3/4 cup diced peeled avocado
1 small chopped tomato
1/4 cup chopped fresh cilantro
3 tablespoons finely chopped red onion
2 tablespoons finely chopped poblano pepper
1 tablespoon fresh lime juice
1/4 teaspoon salt
Sauté pepper and onion until tender. Add corn in butter and sauté 5 minutes. Add all other ingredients and heat. Serve as a side dish (best with crab cakes)
