Seabass is all in the preparation (actually, any fish).

Cast Iron Skillet

Sea Bass Filets

Kosher Salt

Black Pepper

Olive Oil

 

·       Coat fish with olive oil

·       Salt and pepper on the fish

·       Heat the oven to 425 degrees

·       Heat the skillet with oil until it is smoking (very very hot) – I just use olive oil here as well but some use higher temp oils

·       Cook on one side until fish is not sticking to pan (easy to pull up – usually two to three minutes), flip, and two minutes on the other side

·       Put in the over for two minutes

·       Check that internal temperature is what you prefer (I do 130).  FDA recommends 145.
