Sour Dough Bread

Ingredients

·            50g Starter

·            100g Bread Flour

·            100g Warm Water

·            450g Bread Flour

·            15g Salt

·            1 tsp Sugar

·            350g water (77-78% is preferred but hard to work with)

Instructions

Mix Starter 100g flour and 100g water together.  Let double (5-7 hours) for leaven

Mix leaven with 350g water and stir to mix fully

Mix dry ingredients together

Mix wet and dry and incorporate all together well

Stretch and Fold every 30 minutes for 2 – 2.5 Hours

Shape and proof

Oven on 500 with dutch oven in oven

Bread on parchment paper and score

Bread in dutch over and cover

Cook for 20 minutes at 500

Reduce heat to 450, uncover and cook 20-25 more minutes

Turn oven off and open, leave bread in over another 20 minutes

Out and cool - enjoy
